The absolute best time is from mid June to mid July when the lavender fields are in full bloom. The colors are incredible and the air is filled with wonderful scent. May and September are also lovely with fewer crowds and pleasant weather for exploring.

Near Bonnieux you can discover quiet lavender paths with almost no people.
